Today I decided to take the leap and jump on the scale. I am not going to say how much I weigh, but I will say it was not as bad as I had anticipated. I am setting a goal to lose about 2 lbs per week which is very doable. My current goal weight is to be down 28.2 lbs. If I meet my goals, I should be able to do that within 14 weeks. So by July 2nd, I should be at goal. There, I said it out loud. So I have to do it, right? 🙂 Now you all can either cheer for me or you can join me. So this is now going to be dubbed the Fantabulous Day 14 Week Challenge. I will post what I am doing to be successful during the challenge. I would love some company.
Today I successfully cook quinoa. I have heard so much about this super grain, but I have not been exposed to it in the past. This was my second time cooking it and it turned out amazing. This ingredient will definitely be a part of my pantry staples. I was searching on the net for recipes and you would not believe it. There are actually whole websites devoted to quinoa. Whod a newd.
